Ingredients
1/2 lb chicken breast, cooked and shredded
1/2 tsp chili powder
1/4 tsp ground cumin
1/4 tsp smoked paprika
1/8 tsp salt
1/8 tsp ground black pepper
1 cup white rice, cooked
1 Tbs lime juice
1 Tbs fresh cilantro, finely chopped
4 burrito-sized flour tortillas
1 cup cheddar cheese, shredded
8 oz Brookshire’s Black Refried Beans
1/2 cup sour cream
Directions
  1. In a large bowl, toss the chicken in chili powder, cumin, paprika, salt and pepper. Add rice, lime juice and cilantro. Stir to combine. Set aside.
  2. Heat a large nonstick pan over medium-high heat. When the pan is hot, add a tortilla. Sprinkle 1/2 cup of cheese over the top. Top with a second tortilla. Cook until cheese has melted (about 2 minutes per side). Repeat with the remaining tortillas and cheese to make 2 quesadillas total.
  3. Lay a quesadilla flat on a cutting board. Spread 1/2 cup of beans down the middle, leaving a 1-inch edge on each end. Top with half of chicken mixture and half of sour cream. Roll into a burrito. Repeat with remaining ingredients.
  4. Reheat the pan. Add a quesarito to pan. Cook until the outside is golden and slightly crispy (about 3 to 5 minutes per side). Repeat with other quesarito. Cut each quesarito into quarters.
